I just got back from a week of wine tasting in Puglia. A beautiful trip, and in addition to the wines there were the foods.

Lots of greens -- Pugliesi say, Quando minti oiu e sale ogne erba se pote mangiare, When you add oil and salt all greens are edible, and are true to their words: At almost every meal the menu included a platter with fava bean puree and some sort of green, usually chicory or broccoli raab.

Here we have chicory, prepared by the Guarini Family, of Duca Carlo Guarini (an excellent estate with superb wines). Perfect winter comfort food.
